Tortilla Espanola: The Cooking

You will need about a pound of potatoes 
(I am being cutsey by doing potatoes of different colors)

Chop an onion

Saute onion in olive oil

Saute potatoes in small batches until pretty done

Mix cooked potatoes (only if doing different colors)

Prepare a salad or salads

Mix potatoes and onions with 3 large eggs, slightly beaten,
chopped parsley, salt and pepper

Cook in slow fire until the underside is somewhat toasty

Flip semi-cooked tortilla onto plate

Move tortilla back to cook uncooked side

Voila! Tortilla with tomato and orange bell pepper salad 


Cost of meal (approximate, since I did not use all the potatoes, tomatoes, lettuce, eggs, etc. at all. At the same time, I am not including the price of the oil, the salt, and pepper, the gas, etc.):

Organic Onions $2.29
Potato Medley $2.49
Kumatoes $3.49
Sweet Potato $0.49
Mixed Salad 3.00
Orange Bell Pepper $0.50
Eggs $5.00
Organic Parsley $1.00

Total $18.26 divided by four servings (two of us us ate twice): $4.56
